Citrus-Marinated Fillets
1 lb fish fillets
1/3 cup water
1/3 cup lime juice
2 Tbsp honey
1 Tbsp cooking oil
½ tsp dried dill or 3 tsp fresh dill, chopped
Place fish fillets in a flat sealable container. For marinade, combine water, lime juice, honey, oil and dill in a medium bowl. Stir and pour over fish portions, cover and refrigerate for 3-24 hours, turning fillets occasionally. Remove fish, reserving marinade. Place fish on the greased rack of an under heated griller tray, tucking under any think edges so fish will cook evenly. Cook fish under medium grill until fish flakes. Turn halfway through cooking and baste the fish. Baste fish as often as you like and brush fish with marinade just before serving.
