Fried Fish Batter

6 fish fillets
1½ cups dry pancake mix
1 cup 7-Up
1 egg slightly beaten
Salt and pepper to taste

Coat six fish fillets with ¼ cup reserved dry pancake mix; place on a wire rack for 2-3 minutes. Combine remaining ingredients; 1¼ cup mix, 7-Up, egg, salt and pepper in a shallow dish; mix thoroughly. Dip fish in batter, coating both sides well. To fry, heat oil in a Dutch Oven to 350º F. Add fish and fry 1-2 minutes on each side or until golden brown and fish flakes when tested with a fork.
